Peach Cobbler

Ingredients for Filling

  • 8 peaches

  • 1/2 cup white sugar

  • 1/2 cup brown sugar

  • 1 tablespoon lemon juice

  • 2 teaspoon cornstarch

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon ground cinnamon


Ingredients for Topping

  • 6 tablespoons unsalted butter

  • 1 cup all purpose flour

  • 1/4 cup white sugar

  • 1/4 cup brown sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt


Ingredients for Sprinkled Topping

  • 3 tablespoon white sugar

  • 1 teaspoon ground cinnamon



Preheat oven to 425°. Fill up a large pot with water & bring it to a boil. Using a knife, cut a small "X" on each peach before carefully placing each peach into the water. Boil for about 1 minute.



In a large glass bowl, add about 4-5 ice cubes & fill with water. Grab the peaches out of the boiling water & place into ice water bowl.



Using the area where you put an "X", start peeling off all the skin on the peaches. When done, cut all the peaches into slices & place into large bowl.



Now we will begin to make the filling.



Add 1/2 cup white sugar, 1/2 cup brown sugar, 1 tablespoon lemon juice, 2 teaspoon cornstarch, 1 teaspoon vanilla extract, & 1/2 teaspoon ground cinnamon to bowl of sliced peaches.



Mix well.



Place filling mixture into 9x13 inch baking dish. Bake uncovered for 13 minutes.



While that's baking, it's time to make the topping.



In a bowl, mix together 6 tablespoons unsalted butter, 1 cup all purpose flour, 1/4 cup white sugar, 1/4 cup brown sugar, 1 teaspoon baking powder, & 1/2 teaspoon salt.



Using a spoon, scoop & drop topping mixture on top of filling mixture like pictured down below.



In a small bowl, combine 3 tablespoon white sugar & 1 teaspoon ground cinnamon.



Sprinkle mixture evenly across entire dish.



Place in oven uncovered for 25 minutes. Depending on the oven, it may take less or more time. You want to make sure your topping doesn't burn!



Serve & enjoy!
